125g plain flour
1 teaspoon baking powder
1 tablespoon maple syrup
130ml oat milk
1 large egg, lightly beaten
2 handfuls of frozen mixed berries
(I used Tesco perfectly imperfect frozen mixed berries)
Sunflower oil to cook


1. Put the flour and baking powder into a large bowl.

2. In a blender, add the oat milk and the frozen berries. Blitz until combined.

3. Add the egg and maple syrup into the berry mix
and blend together.

4. Stir the wet ingredients into the bowl with the
flour and baking powder.

5. Using a fork, mix it all together thoroughly.

6. Heat a large frying pan over a medium heat and add some oil to just coat the pan.

7. Add two tablespoons of mixture into the pan and cook on each side.

8. When bubbles start appearing in the mixture, flip it over to the other side.

9. Serve with dairy free yogurt and more berries on
the side.
